Ice-hardened German steel and a precise Japanese-style 15° edge angle. have combined to create our Professional knife range, rated Excellent for sharpness. Designed for intensive use by chefs and enthusiastic home cooks who aim for culinary excellence.

Independently tested to the ISO 8442-5 standard, our award-winning kitchen knives are rated Excellent for both sharpness and edge retention.

This internationally recognised test measures how sharp a knife is when new and how well the blade maintains that sharpness over time. Testing is carried out using specialist CATRA (Cutlery and Allied Trades Research Association) edge-testing machines, which provide an objective and repeatable way to measure knife performance.

With 11 knives in the Professional range from all-purpose Chef’s Knife to versatile Paring Knife, there’s a knife for every kitchen task. 

All the knives are dishwasher safe and come with a reassuring 25-year lifetime guarantee.


Professional Santoku Knife

WORLD EDGE GEOMETRY

Taking inspiration from Robert Welch’s Kitchen Devil Pro range from 1979, our Professional knife range has a European look with deep blades.

Ice-hardened German steel combines with a hand applied Japanese-style 15° edge angle, which we call World Edge Geometry, to create a resilient blade with exceptional longer lasting sharpness.  

The German 1.4116 stainless steel is precision-sharpened and ice-hardened to 57 Rockwell - a globally recognised industry standard. This stainless steel with excellent corrosion and wear resistance properties is used to manufacture Swiss Army Knives also referred to as X50 Cr Mo V 15.

Classically designed for comfort in the hand and perfectly weighted – so the blade does the work for you. Each knife is forged from a single piece of steel for strength and durability and effortless food preparation. The ergonomically shaped riveted handle is suitable for both left and right-handed users.
